Cauliflower Steaks

Cauliflower! How on earth can you make it tasty without slathering it with cheese?  We found a way.  This year we’ve been trying to eat better without starving ourselves and hopefully, losing some weight in the process.

Enter Cauliflower Steaks.  Our usual way of making cauliflower was to cut it up and boil it in water. Always good but rather tasteless we found ourselves eating a lot of it because we thought in order to be healthy, we had to eat blandly. Wrong!

Cut a cauliflower in slices about 1/2 inch in thickness trying to include the stem to keep it intact.

Spritz a small amount of oil in the bottom of a frying pan. We use garlic infused oil for flavor.

Add a pat of butter to the oil.

Lay your cauliflower steak in the heated oil and sprinkle with garlic powder and a bit of salt to taste.

Fry for five minutes, gently turn and fry for another five minutes.

During the last minute of frying, sprinkle grated parmesan cheese on the top and let melt. 

Place on plate and serve. The cheese and garlic blend together giving this cauliflower steak and nice flavor. The cauliflower is relatively low in calories (about 146 calories in a whole head).  There are only 22 calories in a tablespoon of parmesan cheese and 36 calories in a pat of butter.  All told, this could be your main dish at only 95 calories (figuring at about 1/4 head of cauliflower after cut).
