Oriental Broccoli Slaw Salad

This past week we were planning our family meal and I was in the mood for something different.  I found a recipe for Oriental Broccoli Slaw Salad and gave it a try.  I must tell you, we were busy working on the landscaping over the weekend didn’t fully read the directions, just the ingredients.  So, a couple of hours before dinner, I started throwing the ingredients together only to see the end of the recipe, you know the direction that said, “Let Sit for 24 Hours”!  Oh well, I pulled it together and thought, if nothing else the Ramen noodles would be crunchy.  It was so tasty and the family enjoyed it.  I had it two days for salads at lunch and still enjoyed it.  I hope you’ll give this one a try and let me know what you think.

  1. Looks yummy. I have high hopes that Mom will allow me in her kitchen a second time. The first time I made curry and did not burn down the house, so I think she’s a little more relaxed!

    • Oh dear. You’ll have to ease your way in. Maybe if you let her know there isn’t any cooking involved in this, she’ll agree.

  2. I make this all the time and it is a favorite of everyone. I substitute honey for the sugar (1/3 up). My recipe said to wait til 1/2 hour before serving to add the dressing to the vegetable/nut mixture, so the noodles are still crispy. I also add a pinch of red pepper flakes to give it a bit of zing. Easy to make and to take to a potluck; never any leftover. Also, I prepare it in a deep bowl so it can be turned over a couple of times to coat everything evenly. It’s a real winner!
