Remember back in the day the saying was “a roast to boast about”? I think it was a commercial or something. Well, my husband, the Biker, makes a mean pot of chili and I am boasting. Give this recipe a try and let me know what you think.
3 lbs. ground beef – browned
1 lb. ground turkey – browned
2 pkgs. mild chili seasoning (he uses whatever is available at the store)
2 15 oz. cans of black beans (drained and rinsed)
1 can whole kernel corn
1 quart tomato juice
1 quart vegetable juice
Shredded Cheddar Cheese
Noodles (we like elbow macaroni).
Brown meat, add seasoning, beans, corn and juices. Heat to almost boiling, then lower heat and simmer for 45 mins.
In a separate pan, boil noodles.
We serve the chili and noodles separately.
