Ingredients
  1. 4 small zucchini squash - sliced lengthwise in thin slices (I use a slicer)
  2. 3 large chicken breasts - grilled or sauteed cut into bite-sized pieces
  3. 1 lb. parmesan cheese
  4. 1 lb. ricotta cheese
  5. 1/2 bag fresh spinach
  6. 1 jar Alfredo Sauce (I use Paul Newman's Alfredo)
Instructions
  1. Layer 1 row of sliced zucchini in bottom of baking pan
  2. Layer cooked Chicken pieces
  3. Spoon 1/2 jar of sauce
  4. Sprinkle on half of Spinach
  5. Sprinkle on half of parmesan cheese
  6. Layer on half of ricotta cheese
  7. Repeat with all layers
Bake
  1. At 350 oven for 45 minutes uncovered (the zucchini will release moisture and if covered, lasagna will be soupy)
Notes
  1. I prefer grilled chicken for flavor. This has become a family favorite.
