Ingredients
- 4 small zucchini squash - sliced lengthwise in thin slices (I use a slicer)
- 3 large chicken breasts - grilled or sauteed cut into bite-sized pieces
- 1 lb. parmesan cheese
- 1 lb. ricotta cheese
- 1/2 bag fresh spinach
- 1 jar Alfredo Sauce (I use Paul Newman's Alfredo)
Instructions
- Layer 1 row of sliced zucchini in bottom of baking pan
- Layer cooked Chicken pieces
- Spoon 1/2 jar of sauce
- Sprinkle on half of Spinach
- Sprinkle on half of parmesan cheese
- Layer on half of ricotta cheese
- Repeat with all layers
Bake
- At 350 oven for 45 minutes uncovered (the zucchini will release moisture and if covered, lasagna will be soupy)
Notes
- I prefer grilled chicken for flavor. This has become a family favorite.
