A friend of mine recently made this salsa and I fell in love with it. At first bite, I was a bit surprised, then I found myself going back time and again for more. The best part is that I’m trying to eat less gluten in my diet and this fits the bill, plus, it’s pretty.
Ingredients
- 1 c. Olive Oil
- 1/2 c. Apple Cider Vinegar
- 1 c. Sugar
- 1 can black beans
- 1 can pinto beans
- 1 can shoe peg corn
- 3/4 c. chopped green onions
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 can diced jalapenos
Instructions
- Boil first 3 ingredients until sugar dissolves then set aside to cool. Drain and rinse all canned ingredients. Pour liquid mixture over all and chill overnight. Before serving drain liquid and serve with tortilla chips.
