Potato Disks

I saw these on social media somewhere, but can’t remember where.  Anyway, we were looking for a side dish to make with homemade hamburgers and didn’t want to make french fries because they turn out soggy.  I remembered these little goodies and made them and boy are they good.  The pictures don’t do them justice.

imag2162Slice a potato crosswise into slices about 1/4 inch thick.  I used a white potato.

Brush the disks with olive oil (I used garlic infused oil)

Sprinkle with salt and pepper to taste and put in a 350 degree oven for 15 minutes.

imag2163Sprinkle cheddar cheese on top of disks and put back into over for 5 minutes more.

Garnish with bacon, sour cream, onions or anything you prefer.

  1. Sounds like I just found one. I don’t cook. My husband does all the cooking. He makes these potatoes on the grill that are to die for. He takes a long sheet of tinfoil and cuts up raw potatoes with the skins on. Then he sprinkles Lipton Onion Dry Soup mix over them. Salt and pepper to taste. Cuts up chunks of real butter an spreads the length of the tinfoil. Then wraps it tight and puts tem on the grill for about an hour, turning them occasionally. Boy they are good.
