- 1 Boboli pizza crust
- 1 tsp good quality olive oil
- 1 10 oz package frozen chopped spinach, cooked and with most of the water squeezed out
- 2 tablespoons pesto sauce
- 1/2- 3/4 cup of Greek feta cheese (I like the sundried tomato and basil feta)
- 1/2 cup sautéed chopped onion
- 1 clove minced garlic
- Baby Bella mushrooms
Instructions
- 1 Boboli pizza crust unwrapped and poke holes (gently) with a table fork on both sides, then rub with good quality olive oil and set aside on a pizza pan.
- 1 10 oz package frozen chopped spinach, cooked and with most of the water squeezed out
- Mix into spinach approx. 2 tablespoons pesto sauce, 1/2- 3/4 cup of Greek feta cheese (I like the sundried tomato and basil feta) and about 1/2 cup sautéed chopped onion and 1 clove minced garlic.
- I also sauté (after the onion and garlic) some baby Bella mushrooms for the top of the pizza and some of that mushroom oil can be mixed into the spinach as well
- Spread additional pesto sauce on the pizza crust until the crust has a light coating of pesto, this takes the place of marinara on traditional pizza but don't overdo.
- Spread the spinach and feta mix over the crust and bake for about 10 minutes in the oven at the temperature on the package (I think it's around 425-450 degrees) then remove the pizza, add mozzarella and this is a judgement call as to how much--it depends on how cheesy y'all like your pizza and bake again until the mozzarella is melted and bubbly and the edges of the pizza are very lightly browned about another 10-15 minutes usually.
